Champ is a traditional Irish dish made of mashed potatoes mixed with milk, butter, scallions, and often serve served with melted butter that is drizzled into a well that you hollow into the top of the potatoes. It’s a perfect side to Irish stew, braised sausages, or any kind of roasted meat. It gets its unique taste from the scallions that are steeped in the milk, and that along with good quality butter sets them apart from other mashes. Champ is served throughout Ireland but it originated in Northern Ireland, where my Grandparents come from which is why I remember Gram making it all the time.
I had the good fortune of ordering champ a few times when I was in Ireland last week and it was almost as good as my Grams 😉☘️
