Monterey Jack cheese, shredded (about 1/2 cup) - 2 medium (1/2 oz. each) scallions, finely chopped (about 1/4 cup), plus more for garnish - 2 tsp. hot sauce - 2 tsp. Worcestershire sauce - 1 tsp. garlic powder - 1 tsp. onion powder - 1/2 tsp. crushed red pepper - 6 oz. sharp Cheddar cheese, shredded (about 1 1/2 cups), divided - 1/2 cup cooked crumbled bacon (6 slices), divided - Round buttery crackers (such as Ritz), for serving Directions 1.
