HOW TO MAKE ๐๐ผ
- Roast your veggies! I used 3 sweet potatoes cubed up and a 12 oz bag of brussel sprouts halves. Place on a baking sheet with parchment paper, top with some olive oil, garlic salt, pepper and onion powder. Bake for 25-30 minutes at 425 degrees
- Cook 1-2 lbs of ground beef, and I used the same seasonings as the veggies. You can use whatever protein you prefer!
- Assemble the bowls ๐ Two big handfuls of kale on the bottom, top with your roasted veggies, beef, and thhhhen the fun additions ๐๐ผ feta, sliced almonds and a maple Dijon vinaigrette
- For the vinaigrette, mix together: 1/4 cup olive oil, 1/4 maple syrup, 3 tbsp apple cider vinegar, 1 tbsp Dijon mustard, salt, pepper and garlic powder (itโs SO GOOD)
I used the vinaigrette for 3 bowls, and had some leftover veggies and beef for lunch the next day ๐
