🦃 This Pumpkin Olive Oil Cake is perfect for your holiday table! Here’s what you need to try this at home!
🎃 Ingredients:
2 cups flour
2 tbsp pumpkin spice
1 tbsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp salt
15 oz pumpkin puree
4 eggs (room temperature)
1 cup brown sugar
1/2 cup granulated sugar
2 tbsp maple syrup
1 cup olive oil
1/2 cup milk (room temperature)
1 tbsp vanilla extract
2 tbsp powdered sugar (for dusting)
🍂 Instructions:
Preheat your oven to 350°F
In a large bowl, mix the pumpkin puree, eggs, brown sugar, granulated sugar, milk, maple syrup, olive oil, and vanilla extract until smooth.
In the same bowl, add in the dry ingredients: flour, baking powder, baking soda, salt, pumpkin spice, and cinnamon. Whisk until combined.
Pour the batter into a 9x13-inch pan.
Bake for 1 to 1.5 hours, or until a toothpick comes out clean. (Mine took 1 hour 20 minutes.)
Let the cake cool, and dust it with powdered sugar.
