Ingredients
1 tbsp olive oil
2 skinless chicken breast halves (around 1-1.5 lbs)
1/3 cup chicken broth
1/3 cup organic maple syrup
2 tsp chopped fresh thyme
2 cloves garlic minced
1 tbsp apple cider vinegar (or pumpkin vinegar)
1 tbsp stone-ground mustard
Salt and pepper to taste
Instructions
1. Preheat oven to 400F.
2. Heat oil in a large ovenproof skillet.
3. Season chicken with salt and pepper. Cook chicken in hot oil, 2 mins per side or until golden. Remove.
4. Add broth, syrup, 1 tsp thyme, and garlic to pan, scrape bottom for bits.
5. Cook sauce for 2 mins, add vinegar, mustard, cook 1 more min.
6. Return chicken to pan, spoon sauce over. Bake for 10 mins.
7. Spoon sauce over chicken, sprinkle remaining thyme and serve warm.
