I’ve been making these baked tacos for my kids since they were small and they are still as big a hit with them now. The great thing about them is that you can make the filling a few days in advance and park into the fridge until you are ready to fill the shells and bake them. Any leftover filling can be used for quesadillas or taquitos later on. I’ll be making a tray of them this weekend to eat while we agonize in watching the NY Giants fight for their life against Detroit on Sunday 🙄🫣 . .
