Ingredients
* 3 bone‑in, skin‑on turkey thighs
* 1 tbsp avocado or olive oil
* 1 tsp salt, 1 tsp black pepper
* 2 tsp dried thyme, 2 tsp dried rosemary, 1 tsp dried sage
* 4 tbsp cold butter, cubed
* 1 onion, sliced
* 4 garlic cloves, smashed
* 3/4 cup chicken or turkey stock
* 1 tbsp Dijon
* 1 tbsp soy sauce or coconut aminos
* Slurry: 2 tbsp cornstarch + 2 tbsp cold water
* 12 oz green beans
* Potatoes: 1.5 lb Yukon Golds (peeled, chunked), 3 garlic cloves, 1/2 tsp salt, splash water
* Mash: 3 tbsp butter, 1/4–1/2 cup warm milk or stock
Steps
1. Season turkey with salt, pepper, thyme, rosemary, sage.
2. Sauté: Oil in pot, brown thighs both sides. Remove.
3. Base: Sauté onion + smashed garlic 1–2 min. Add stock, Dijon, soy/aminos; scrape fond.
4. Toss in green beans set trivet on top.
