Recipe is for 1lb of fresh calamari
🦑 Fried Calamari
1lb Calamari, cleaned and sliced into 1/2 inch strips
1/2 cup of butter milk (or regular milk)
1/2 tsp salt
1 1/2 cup flour
1/2 cup corn starch
1 tsp baking powder
Oil for frying
🌶️ Siciliana Sauce
3 large garlic cloves, minced
1/2 to 3/4 cup cherry peppers, roughly chopped (depending on heat level)
2/3 cup white wine
1/2 cup lemon juice
1 cup chicken bone broth
Parsley, as needed
Salt, to taste
1/2 tbsp corn starch
1 tbsp water
Marinate the calamari in the milk and salt for 30 minutes, up to 2 hours
