I love how something so simple can pack such a big punch. This is such a creative and fun way to serve hummus this holiday season! Form a wreath on a round platter with hummus (store bought or homemade… this is traderjoes Hummus). I topped it with a ring of tabouli followed by a sprinkling of crumbled feta. Dot it with some cherry tomatoes and make a bow out of shaved cucumbers and a tomato. Drizzle with a little olive oil and serve with pita crackers or veggies. Simple and so deliciously festive!

1 1/2 cup cooked bulgar (cook according to the package directions)
1/3 cup extra-virgin olive oil
Juice and zest of one large lemon
3 garlic cloves, chopped
1/2 tsp salt
1/4 tsp pepper
2 cups parsley chopped
1 cup tomato, chopped
1 cup cucumber, chopped small
1/3 cup mint, chopped
3 scallions, chopped
Combine everything in a bowl and stir together well. Refrigerate for an hour at least to let flavors marry.
