🎄 Coconut Shrimp | I grew up eating this on Christmas Eve every year… but this time I’m elevating it with a Calabrian Chili Sweet Chili Sauce to pack in some sweetness and a little heat. You’ll eat a dozen of these easily! 🍤 Shrimp 1 pound large shrimp (raw), cleaned and deveined 1 cup sweetened shredded coconut, plus more as needed 3/4 cup panko breadcrumbs, plus more as needed 2 eggs, whisked Flour, as needed Salt & Pepper Oil for frying 🌶️ Calabrian Chili Sweet Chili 1/3 cup white wine vinegar 1/3 cup water 1/3 cup sugar 1 tbsp sherry 1 rounded tbsp Calabrian Chili paste 1 tsp chili flakes 2 large garlic cloves, grated 2 tsp cornstarch dissolved in 1 tbsp water Start by making the sweet chili. Add all the ingredients to a small sauce pan and bring to a boil, stirring often, until all the sugars are dissolved. Once the sugars are dissolved, stir in the cornstarch slurry.
