Butternut Squash & Roasted Garlic Pasta
Serves 4
1 small butternut squash, cubed
1 white onion, quartered
3-4 rosemary sprigs
2 garlic bulbs, heads removed
2 tbsp olive oil, divided
1 can coconut milk
2 cups veggie broth
1 box pasta of choice, I used shells
1 cup Parmesan cheese, divided
1 tbsp olive oil

Directions
1. preheat oven to 450F degrees. Line a large baking sheet with parchment paper and set aside.
