INGREDIENTS:
4 cups cabbage finely chopped (1/2 head)
3/4 cup finely chopped red onion(1/4 onion)
1/4 cup plant-based ranch
1/4 tsp sea salt
2 tbsp red wine vinegar
1, 10 oz package of Beyond Chicken Nuggets
⅓ cup BBQ sauce
4, 10-inch flour tortillas
6 Tbsp plant-based cream cheese
1 Large avocado
2 tomatoes, thinly sliced
½ cup cilantro
salt and pepper to taste
PREPARATION:
1. Preheat your oven to 425℉. Bake your Beyond Chicken Nuggets for 7 minutes flipping halfway through. Remove from the oven and allow to cool for 5 minutes before chopping into ¼ inch pieces. Toss with bbq sauce and put aside.
2. Prepare the slaw mixture by combining cabbage, red onion, ranch, red wine vinegar, and ¼ tsp sea salt in a large bowl.
