2 tbsp orange juice
1 tsp orange zest
1/4 cup strawberry jam/preserves
3 pints of strawberries, trimmed
1 puff pastry sheet (I used Pepperidge Farm)
2 tbsp oat milk (any dairy free milk is fine)
1 tbsp maple syrup (any syrup is fine)
1 tbsp cane sugar (optional)
1 cup dairy free whipping cream (I used Country Crock)
3 tbsp powdered sugar
2 tsp vanilla extract
Preheat oven to 400° F. Whisk together orange juice, zest, and jam and place in microwave for 30 seconds (this’ll help slacken the jam). Pour over prepped strawberries and stir so they are evenly coated. Roll out puff pastry until it’s approximately 16” x 12” and transfer onto baking sheet lined with parchment paper. Then, using a sharp paring knife, score around the edge to create a 1-inch border. Whisk together a quick wash by mixing oat milk with maple syrup. Brush the wash on the 1-inch border. OPTIONAL...
