Every year I’ll get a few comments from people complaining that the gingerbread cookies or muffins that they made came out tasting bitter and just terrible. This can happen when you use blackstrap molasses instead of regular molasses.
I learned many of these people were using this specific brand because it does not explicitly state that it is blackstrap on the front (it’s hidden on the back!).
I recommend instead using an unsulphured molasses like grandma‘s brand or brer rabbit brand that ONLY lists regular old “molasses” in the ingredients which will give you the classic gingerbread flavor you are looking for.
