Makes 12 baklava cupsā£
1 package phyllo dough, thawedā£
1 stick unsalted butterā£
1 cup pistachios, saltedā£
3/4 cups raw walnutsā£
3/4 tsp cinnamonā£
1/2 cup granulated sugar (or monkfruit)ā£

1/2 cup granulated sugar (or monk fruit)ā£
1/2 cup water ā£
1/4 cup honeyā£
1 tsp lemon zest ā£
1 tsp vanilla extract ā£

Make the simple syrup. Add the sugar, water, honey, and lemon zest to a small sauce pan and heat over medium-high heat. Stir. Bring to a boil, then reduce the heat to a simmer, stirring occasionally.
