Emma’s Black-Eyed Peas
Ingredients:
-4 tbsp butter
-1 onion, diced
-1 green pepper, diced
-1.5 tsp garlic, minced
-1.5 tsp salt
-1/2 tsp pepper
-1/2 tsp dry mustard
-1/2 tsp garlic powder
-2 15oz cans of black eyed peas
-12 oz Eckrich smoked sausage (I used turkey), sliced
-2 tbsp tomato paste
-1 cup red wine or burgundy wine
-1 bay leaf
-2 cups cooked rice
Directions:
1. Preheat the oven to 350 and grease a baking dish.
2. Sauté the onions & peppers in butter over medium heat for about 7 minutes or until soft.
3. Add in the spices & garlic and sauté for another 2 minutes.
