Meatballs:
1/2 cup panko breadcrumbs
1/2 cup milk
1/2 a pound ground pork
1/2 a pound ground beef
1 egg, beaten
3 garlic cloves, finely chopped
1/4 cup parsley, finely chopped
1 teaspoon salt
1/2 teaspoons pepper
1/2 teaspoons oregano
1 teaspoon Worcestershire sauce
-In a large bowl, mix together the panko and milk until combined. Set aside and let soak for 5 to 10 minutes.
-Add all remaining ingredients and mix until just fully combined. Form into about 20 meatballs. Chill in the refrigerator for 15-20 minutes before cooking so they keep their shape.
-In a large pot over medium-high heat, heat 2 tablespoons avocado oil. Add meatballs and cook for 1 minute on each side. Remove and set aside.
