COMPOUND BUTTER👇🏾
* 1 stick unsalted butter
* 4 tbsp gustusvitae “taste of Bordeaux”
* Juice of 1 lemon
* 1 tbsp salt

TO MAKE:
🔥Soften butter. Add in remaining ingredients and stir to combine. Store in plastic wrap or container.

SCALLOPS:
1️⃣ Pat dry and if possible, let sit uncovered on rack in fridge to air dry for at least an hour
2️⃣ Heat skillet to high heat and add in high heat oil
3️⃣ Season scallops with salt and pepper at last moment before they go in skillet
4️⃣ Arrange scallops in clockwise pattern. Dear 90 seconds and flip. Add in butter. Cook 30 more seconds and remove scallops to plate. Top with browned butter.
