For the crust:

2 ½ cups all-purpose flour
2 cups Cheez-It Crackers
2 tbsp granulated sugar
1 ½ tsp kosher salt
1 ½ sticks (¾ cup) unsalted butter, chilled and cubed

1 large egg, whisked
For the filling:

8 large Granny Smith apples, cored, peeled, and sliced into 1/4-inch slices
½ cup granulated sugar
¼ cup all-purpose flour
2 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground allspice
½ tsp kosher salt
1 lemon, juiced

In a food processor, pulse Cheez-It Crackers until finely ground. Add flour, sugar, and salt, and pulse to combine. Add butter and pulse until the mixture reaches pea-sized crumbles. Slowly stream in water while pulsing until the dough comes together but is still shaggy.

Divide the dough into two equal pieces and shape into flat discs. Chill in the refrigerator for at least 2 hours or up to 3 days.
