Recipe for 12-15 fully stuffed shells:
•boil jumbo pasta shells al dente
•sauté 15-20 shrimp with 1tbsp butter & 1tbsp garlic
•remove shrimp from skillet
•add in 1tbsp sun-dried tomato oil, 3/4 jar of garlic marinara, 1tbsp parsley & 1 cup heavy cream
•simmer on low for 3min
•let shrimp cool & dice into small pieces
•in a bowl mix 15oz ricotta, shrimp, 1/2 cup chopped spinach, 1 cup mozzarella, 1/2 cup diced sun-dried tomatoes
•pour in 1 cup of pasta sauce on baking dish
•stuff shells fully with shrimp mixture & place in baking dish
•pour remaining sauce over shells
•top with more grated mozzarella, crushed red pepper, parsley & top with aluminum foil
•bake at 375 for 10 minutes
