Using a grater was a biscuit GAME CHANGER for me! Grating your butter (using a box-grater) quickly shreds the butter into perfectly-sized pieces, which you’ll toss in with your flour before adding milk. This trick keeps you from over-working the butter or letting it get too warm while you fumble with a pastry cutter. Also, always chill the butter for about 15 minutes before grating, this makes it easy to handle and cold butter is another key to tall, flaky biscuits.
