Gluten-free cakes for celebrations 🎉 I've been getting questions on TBG about cakes for birthdays and other occasions, so thought I'd highlight a few favorites here. I'm very particular about cakes. They need to be super moist, springy, and not too sweet. These four cakes are all sweetened with maple syrup and topped with less-sweet frosting options. They're rich, luscious, and decadent, but they won't give you a sugar rush. 1. Grain-free lemon cake: made with cassava and coconut flours and topped with tangy cashew-coconut frosting. 2. Gluten-free sponge cake: light and floofy, with a tender crumb made extra flavorful with sweet rice, oat, and millet flours. Topped with whipped mascarpone, berry chia jam, and fresh berries.
