Harissa Roasted Veggies and Chicken Thighs featuring

Ingredients:
-6 boneless skinless chicken thighs
-1 small/medium head of cauliflower cut into florets
-3 carrots peeled and cut into 1 inch pieces
-1 red onion sliced
-1 can of chickpeas drained and rinsed
-2 TBL Harissa paste
-3 TBL extra virgin olive oil
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp cumin
-1 tsp dried oregano
-1 tsp smoked paprika
-1 tsp salt
-1/2 tsp black pepper
-1 cup full fat Greek yogurt
-1 TBL chopped fresh mint
-1 lemon
-2 bags of Success Boil-in-Bag Pearl Couscous
Preheat oven to 425 degrees.
To a small bowl, combine the harissa pasta, olive oil, and seasonings. Mix. To another bowl, add your chicken thighs. Add about half of the harissa mixture to the chicken and mix until fully coated.
