Quick Gochujang Fried Rice with

Usually for good fried rice you need to use day-old rice. With the Minute Instant Jasmine Rice, I was able to get this all done, in under 40 minutes, from start to finish, no day-old rice required. Big win!
Ingredients:
2 C. Minute Instant Jasmine Rice
5 Slices Bacon
2-3 Eggs, beaten
7-8 Scallions, whites and greens separated
5 Cloves Garlic, thinly sliced
2 T. Gochujang
1 T. Soy Sauce
2 tsp. Sesame Oil
½ C. Frozen Edamame
Gochujang Mayo:
½ C. Mayo
1 T. Gochujang
1 tsp. Honey
1 tsp. Sesame Oil
1 T. Rice Vinegar
Method:
1. Start by adding your rice, and 2 cups of water to a bowl or measuring cup. Place in the microwave for 8-10 minutes.
2. Take the rice out, and pour onto a sheet pan or baking dish. Spread it out. Place it outside or by an open window until it is done steaming. Place in the freezer while you are preparing the rest. This will give you that dried out feel of day old rice.
