here’s my lemon bar ice cream recipe!
- 1/2 c granulated sugar
- zest of 2 lemons
- 2 tbsp dry milk powder
- 11/3 c heavy cream
- 113 c whole milk
- juice of 2 lemons
1. Zest two lemons into the sugar
2. Juice two lemons and SET ASIDE
3. Stir together all ingredients BUT the lemon juice over medium high heat until fully combined
4. Chill the mixture in fridge until cold
5. Add lemon juice to the chilled mixture
6. Pour into ninja creami containers to freeze overnight, or churn like regular ice cream
7. Churn the next day if using ninja creami containers

- chop into bits to layer throughout in ice cream container
- alternate layering the shortbread bar base, lemon curd, and ice cream
- enjoy!
