Recipe:
Chicken marinade:
1 pound chicken thighs, cut into small cubes
1 teaspoon avocado oil
1 tablespoon light soy sauce
1 teaspoon mirin
1/8 teaspoon white pepper
a pinch of kosher salt
1 teaspoon cornstarch
-Add chicken to a bowl with all ingredients. Mix until chicken is completely coated. Set aside until it’s time to cook.
Sauce:
2 tablespoons dark soy sauce
1 tablespoon light soy sauce
6 tablespoons water
2 tablespoons oyster sauce
1 teaspoon sesame oil
1 tablespoon rice wine vinegar
2 teaspoons cornstarch
2 teaspoons sugar
-Add all ingredients to a small bowl and whisk until fully combined. Set aside until it’s time to use.
Stir Fry:
3 tablespoons avocado oil
4 garlic cloves, minced
1 teaspoon ginger, minced
3 dried red chili peppers, deseeded and chopped
6 scallions, white and green parts separated and chopped
1 red bell pepper, chopped into cubes
