#TastyTuesday recipe of the week: Buffalo Chicken Tacos
Ingredients:
6 whole wheat tortillas
2lbs boneless skinless chicken breasts, diced
1 c greek yogurt
1/2 T coconut oil
1/2 t. salt
pepper to taste
1/4 c buffalo sauce
3 large carrots, shredded
1 head romaine shredded
3 c water
3 oz blue cheese
Directions:
1. Preheat large skillet on M, add oil and chicken and season with salt & pepper
2. Cook for about 8 minutes, stirring occasionally
3. Reduce head to low-medium and cook a few more minutes. Chicken should be golden brown and cooked thoroughly.
4. In a small bowl crumble blue cheese with a form. Stir in yogurt and seasonings.
5. Pour buffalo sauce over chicken in the skillet. Stir for 2-3 minutes, adjust to taste if needed.
6. Place desired amount of lettuce, carrots, chicken in each tortilla and top with blue cheese sauce.
