Ginger Rhubarb Strawberry crisp is a great spring and summer dessert. So easy to make it with a few basic pantry ingredients and it can be made with any type of seasonal fruits. Ice cream for serving is a must! Happy Wednesday🍓

Filling
2 cups of rhubarb chopped
3 cups strawberries washed and sliced
2 tbsp almond flour
2 tbsp brown sugar

For the crust
1 cup almond flour
1 cup oats
1 cup brown sugar
1 cup walnuts
1 tsp grounded ginger
1 stick of cold butter

In a medium bowl combine rhubarb and strawberries with sugar and almond flour. Set aside. In a medium bowl combine all ingredients for the crust. Spread the crumbled mix over the fruits and bake 350F for 45 minutes. Let it cool for 30 minutes before serving with a classic vanilla ice cream! Enjoy!
