Beautiful Brisket Baby!!! . Hot n fast brisket cooked on the pitbarrel over jealousdevilcharcoal maxxx briquettes. . METHOD: 1️⃣ Trim your brisket to your satisfaction. Use any binder you like, I’d not you can skip. Season liberally with salt and pepper or whatever beef rub you are using. 2️⃣ Place fat side down on pitbarrel and cook for about 90 minutes. Flip your brisket and cook for 90 minutes more. 3️⃣ After 3 hours or so, the bark should be set and the brisket should be ready to wrap. Wrap it tightly in butcher paper. You can use foil if you prefer. Place it back on your smoker at a lower temp until it’s tender. This took me 90 more minutes back in the pit. 4️⃣ Let rest at least 2 hours before slicing but I’d recommend 6-8 if you can. Only slice what you need and enjoy! ▪️Guessing my PBX was at 325 or so and the rack sits maybe 2 feet from the fire.
