Bringing you a Spring tabbouleh today filled with asparagus, peas, radishes and a lots of herbs. It is truly an addictive salad. Perfect for meal prep too as it tastes better the next day. Happy Wednesday💚🌱
2 cups couscous cooked
1 cup green peas fresh or frozen
1/2 bunch asparagus chopped
1/4 red onion diced
3-4 radishes matchsticks cut
1/2 cup feta cheese crumbled
2 tbsp fresh dill chopped
2 tbsp fresh mint chopped
1 lemon zest and juice
1/2 cup olive oil
Pinch of salt
Start by steaming or blanching the asparagus snd peas for 5 minutes
Transfer into ice bath to stop the cooking of the vegetables.
In a large bowl add couscous all the vegetables, and fresh herbs.
Zest the lemon and squeeze the juice over the salad.
Pour olive oil and combine gently.
Add the feta cheese and mix one more time.
Refrigerate and serve it room temperature or chilled.
It can stay up to three days on the refrigerator.
