In todayās edition of pastry school in France, we are making a classic French cake: the Charlotte. Named after Queen Charlotte in Victorian era, back when it was a thing to name desserts after famous people. Who wants to name a cake āthe Valentinaā?š¤
Made with a lady finger biscuit base, Bavarian cream, and lots of fruit. If pears arenāt your thing, use raspberries instead. While pears arenāt my top choice when it comes to fruit, they actually went so well with this cake!
