MEAL PREP has included a lot of burritos lately. They are easy to eat and to take along when you need a meal on the go (they don’t squish nearly as easily as a sandwich) and you can pack them full of nutrient rich foods! Here’s the thing, almost anything can go into a burrito so get creative! I typically set out a spread like this and make a dozen or more and then freeze them until ready to eat. Now I’ve got plenty to share with friends too. 💕 Pro tips: 🌯cook up a few items a day or two ahead of time, like diced potatoes and season well with chili or garlic powder (sweet potatoes are my fave!) 🌯 dice up a variety of fresh veggies and season with salt n pepper, simple deliciousness 🌯make a different variety each time by using whats in your pantry and fridge 🌯 softer fillings (shredded carrots) will roll better then large, sharp items (julienne carrots) 🌯start with room temperature tortillas for easier rolling and less breakage #bonappetit ⬇️ what’s your go-to burrito fil...
