This apricot jam is the first jam I’ve made using a traditional method. I typically make my jam with chia seeds.
I found beautiful apricots at the farmer’s market a couple weeks ago, and wanted to preserve that amazing flavor year round.
This recipe details my trials - pectin, or no pectin? And uses natural sweeteners instead of sugar, with about ¼ as much added as in a typical jam recipe.
