Tri-tip 🥩 & shrooms 🍄

1 Tablespoon unsalted butter
1 shallot
4-6 cloves garlic
1 tbsp tomato paste
2 Tablespoons flour
3/4 cup dry red wine
1 cup beef stock
2 sprigs fresh thyme
1 tbsp mustard
2 tbsp soy sauce
1/3 cup heavy cream
Salt and pepper (to taste)

1️⃣ Heat olive oil over medium-high heat. Sauté about 3 minutes. Stir and about 3 minutes longer. Transfer to a bowl.
2️⃣Reduce heat to medium, add butter and shallot. Cook about 2-3 minutes. Add garlic and cook until fragrant. Add tomato paste and cook 1 minute, stir in the flour and cook 1 minute more. Add the wine, broth, thyme, mustard and soy sauce. Bring to a boil over medium-high heat, then reduce the heat and simmer for 5 minutes.
3️⃣ Stir in cream and the shrooms. Simmer 5 minutes more. Season with additional soy sauce, salt, and pepper, to taste.
