Let’s make my favorite Súp Măng Cua, aka Vietnamese Crab and Asparagus Soup! 🦀  This traditional Vietnamese soup is commonly served at weddings or during the Lunar New Year, but it’s also perfect for the cooler fall weather. 😋 I love making this easy soup with homemade pork broth, but you can opt for a premade broth to save time. See link in bio. 📝 Ingredients — 20 servings 👨‍👩‍👧‍👦 Soup ▢ 24 cups of Pork Broth ▢ 2 cans white asparagus ▢ 16 oz can lump crab meat (Costco 🙌🏻) ▢ 15 oz can quail eggs ▢ 2 dried snow white fungus optional ▢ 1 fish maw (optional) ▢ 3 large eggs whites and 1 egg yolk Potato Starch Slurry ▢ ½ cup Potato starch ▢ 1 cup water Garnish ▢ Cilantro  ▢ Green onion  ▢ White Pepper 👩🏻‍🍳 Instructions
