Scallops with browned butter n lemon 👌🏾

1️⃣ Remove foot from scallops. It gets rough/chewy.
2️⃣ Pat scallops as dry as possible. If you have time, let sit uncovered in refrigerator for 30 minutes as well to remove moisture.
3️⃣ Season right before you’re about to sear. Too soon Andy you can draw moisture to the surface that can ruin your sear.
4️⃣ Place in a skillet heated to high with high heat oil (grape seed, peanut, canola). Season other side after you last scallops down. Season other side. Cook 45-60 seconds. Flip. Add butter. Cook for 45 seconds. Remove from pan.
5️⃣ Add lemon juice to pan. Stir into butter. Pour over scallops and enjoy 😉
