And also my argument for high-gluten cookie baking! There’s more in my newsletter, but most recipes tell you to barely mix your dry ingredients in with your dough. Yet I’m going rogue. Cookie doughs have way less moisture than other batters, making the risk of overmixing so much lower, and also making the benefits of developing a little gluten - kind of a perk! The dough gets chewy, but stays soft, kind of like a really perfectly dense brownie.
And I know what you’re thinking - won’t mixing make a cookie too dense? But the answer is not at all! The cream and honey in this cookie is designed to keep the cookie tender and moist, while the gluten develops the chew. Without the mixing, the cookie could get a little greasy and flat.
