Located in the lobby at The Sanctuary, this chocolate display, minus the acrylic
dome, is 100% edible and was constructed from 64% dark chocolate couverture over the past 8 weeks. Hours of engineering have gone into the display, which required extremely precise measurements and craftsmanship from our pastry team.
The molds used to create the display were taken from everyday items used in our pastry kitchen and around the house. In total, approximately 240 pounds of chocolate were used. Production started with a simple sketch in the beginning of October and required around 200 hours at the time of completion.
