The BEST Dominican dessert: MAJARETE π½π©π΄β₯οΈ godomrep
One of my favorite travel and learning experiences was taking a cooking class in the Dominican Republic. Majarete is a Caribbean corn pudding where you take 6-7 corn cobs and blend them with condensed milk, evaporated milk, and coconut cream. The mixture gets strained and is then cooked over low heat for several minutes until it thickens. While the concept is simple, the process is laborious. Between straining the corn and constantly stirring while cooking, your arm will go numb, haha.
After cooling down, we garnished with some torched brown sugar, guava jam, and coconut flakes.
All of my training as a pastry chef has been focused on European cuisine, so this experience making Dominican Majarete at sololasrd in Santiago de Los Caballeros was priceless to me.
