ONE POT MEAL ALERT - coconut wild rice and chicken 😌 such an easy, breezy meal for those cold chilly nights !! #onepotmeal #wildrice #chickenthighs #healthyrecipes Ingredients: 1.5 pounds chicken thighs; bone in, skin on 1.5 tbsp avocado oil 1.5 cups of cultivated wild rice 1 can coconut milk 1 cup chicken bone broth (stock works too) 5 cloves of garlic finely chopped 1.5 cups sliced crimini mushrooms 3 sprigs of thyme 1 tsp salt arugula cherry tomatoes parmesan cheese salt, pepper, garlic powder Directions: 1. In a medium sized bowl, add the rice and fill the bowl up with water. Let soak for 30 minutes and then drain the water and rinse the rice. 2. Heat a large dutch oven or stock pot over medium heat and add in a drizzle avocado oil. While pot warms up, pat dry the chicken thighs and then generously season with salt, pepper, and garlic powder. 3.
