This is an excerpt from an hour-long talk I gave at the Dubai International Food Safety Conference in December. The topic was "Creating a Speak-Up Culture." Too often, employees remain silent when they spot hazards because they fear retaliation. There's an opportunity to instill confidence, no matter the culture, and training is one avenue. But it can't be just any kind of training, which is why this section is part of the presentation.
