Today's recipe is a simple one (but with many nuances): Potatoes and eggs. Caroline Manzo says it best: "You're taking something very simple and turning it into a million different things with very little effort." The recipe itself is easy — what you do with it after (adding your own flourishes like pancetta, bacon, etc) is up to you. It's a fantastic easy holiday recipe that can produce a legitimately delicious, warm meal in very little time.

POTATOES AND EGGS RECIPE
Potatoes (cubed)
Onions (chopped)
Salt
Pepper
Garlic powder
Olive oil
-Let it all get nice and soft
-Throw 2-3 scrambled eggs in and lower the heat. Constantly stir the eggs. Add cheese to the pan. ("The more cheese the better" -- Lauren uses American; your tastes may -- and can -- vary)
