I coated 1/2” onion slices in a mixture of 1/2 cup flour, 1 tablespoon baking powder, and salt and pepper. Then 1 egg beaten with 1/2 cup buttermilk. Then coated in panko!
I dropped them in canola oil heated to 350 degrees. I filled the center of each with latke mix. Then fried for around 3 minutes on each side (be careful, if you try flipping too early, the latke will fall out!).
