Five years ago, Portland was facing a serious conundrum. A snowstorm was looming, not entirely uncommon for the city, but always something that sends it spinning. Grocery stores were packed with people trying to buy provisions to sustain themselves and their families through the storm. Shelves were becoming sparse with things like water, toilet paper and canned goods in everyone’s carts. However one very important (to Portland) provision sold out almost immediately: Kale.
