Ingredients 2 eggs 3/4 cup of sugar 1/2 cup melted butter 1 cup flour 1 tsp baking powder 1 tsp lemon zest 2 tbsp lemon juice Pinch of salt 1 cup blueberries 1 tbsp sugar to sprinkle Instructions Preheat oven to 350F. Start by whisking the eggs with sugar with a hand mixer until foamy. Slowly pour the melted butter and continue to whisk for another minute. Add the lemon zest, lemon juice, flour, baking powder and a pinch of salt. You will end up with a thick batter. Spread the batter on a greased spring form pan (I used 7” pan, but 9” works too)Top with blueberries and sprinkle some sugar. Bake for 30-35 minutes or until knife comes out clean.
