"I chose Miami because it was a virgin market for what I wanted to do – to bring the authenticity of Japanese cuisine to a Latin American market," Perez Miranda tells us. The Venezuelan's efforts to promote authentic Japanese cuisine and culture in Miami did not go unnoticed by his former host country.
