After driving by @chueyfus too many times to count over the last year, we finally had to try it and it did not disappoint. Located off of Santa Fe and 11th, this restaurant brings Latin & Asian Fusion cuisine together to make the ultimate food collab. Everything on the menu looked fabulous and we loved that many items could be made into your choice of tacos, burritos or bowls. Ultimately, we opted for a few tacos, the ramen and the pho burrito (a menu staple). The portions were big but our appetite was bigger as we ate every last bite of each entree. Our favorite was the burrito which takes your typical pho bowl and creates the most spectacular burrito with rice noodles, bean sprouts, meat and all the other fix-ins! Chuey Fu’s (meaning Lucky Uncle) originally opened as a food truck about ten years ago, and since, they have built up the restaurant, opening a store front and adding a second truck.
