Bringing you a Spring Tabboukeh today filled with asparagus, peas, radishes, feta cheese and a lots of herbs. It is truly an addictive salad. Perfect for Easter table or meal prep too as it tastes better the next day. Happy Tuesday 💚🌱
2 cups couscous cooked
1 cup green peas fresh or frozen
1/2 bunch asparagus chopped
1/4 red onion diced
3-4 radishes matchsticks cut
1/2 cup feta cheese crumbled
2 tbsp fresh dill chopped
2 tbsp fresh mint chopped
1 lemon zest and juice
1/2 cup olive oil
Pinch of salt
Start by steaming or blanching the asparagus snd peas for 5 minutes
Transfer into ice bath to stop the cooking of the vegetables.
In a large bowl add couscous all the vegetables, and fresh herbs.
Zest the lemon and squeeze the juice over the salad.
Pour olive oil and combine gently.
Add the feta cheese and mix one more time.
Refrigerate and serve it room temperature or chilled.
It can stay up to three days on the refrigerator.
