A recipe that's a guaranteed success at the dinner table? Shrimp linguine cacio e pepe! Easy to make, even easier to enjoy!
Ingredients
400g Linguine Al Bronzo
200g whole fresh shrimps
300g pecorino romano
5g ground pink pepper (fresh or dried)
1 grated lime
Extra virgin olive oil
Salt to taste
Method
1. Clean the shrimp and set aside heads and carapace(shells); boil heads and carapaces with two glasses of water and a pinch of salt in a saucepan for 20min.
2. Meanwhile, in a large skillet, quickly scald the cleaned shrimp over low heat and then remove them from the heat.
3. Cook the pasta in plenty of boiling water for 12 minutes, in the meantime mix the pecorino cheese, pink pepper powder and a drop of oil in a bowl.
4. As soon as the pasta is cooked, drain it, keeping aside half a glass of cooking water; pour it into the pan together with the seared prawns.
