This super quick and easy tuna fusilli is full of delicious flavour and perfect for a weeknight dinner. Prefer to leave out the tuna? Then try it out with chickpeas instead. Ingredients (serves 4): 320g Barilla fusilli 500g tomatoes, peeled and chopped 200g canned tuna in oil, drained and flaked 100g onion, peeled and chopped 30ml extra-virgin olive oil 4 fresh basil leaves, chopped 1tbsp minced fresh parsley 1 garlic clove salt and pepper to taste Method: 1. Heat the extra virgin olive oil in a pan and sauté the onion with the whole garlic clove. When the onion has turned golden brown, add the tomatoes, then season with salt and pepper. Cook the sauce over high heat for about 15 minutes, stirring occasionally. 2. Add the tuna and cook for another 4 to 5 minutes. Remove the garlic clove, and add the minced parsley and the chopped basil. 3. Bring a pot of salted water to a boil and cook the fusilli until it is al dente; drain. 4. Toss with the tomato sauce, and serve. Buon appetito...
